Would it be possible to replace these proposed escalators https://www.sydneymetro.info/article/955-million-central-walk-sydney-metro-contract-awarded with travelators https://www.schindler.com/us/internet/en/mobility-solutions/products/moving-walks/inclined-moving-walks.html and big lifts https://www.zdnet.com/article/mitsubishi-installs-worlds-largest-elevator-in-japan-80-passengers-per-car/ as many people with luggage or strollers find them a bit dangerous especially if you are old.
I once caught a lift with a lady who said she nearly fell on an escalator and has never used one since also a wheelchair can be used on them when they are stopped in an emergency and they would be just as cheap to install as the drift can be done with a roadheader.
Geometry isn't on the side of travelators.
They have to be set at a lower angle than escalators. In the deeper examples, like those from the concourse to the Metro would probably run the length of the platform concerned, so if you use the travelator at the North end you end up at the South end of the platform.
It would be possible to use travelators from the cross passages to the platforms 16 to 23 because they would just emerge slightly further up the platform.
But the escalators are suitable for and popular with the great majority of passengers and because of the shorter length get the passengers to the new level faster. Lifts are available for those who can't or don't wish to use the escalators. At present many people use the lifts to platforms 16 to 23 to avoid the stairs. Many older or less fit people would be happy to use escalators rather than climb the steps and that should reduce the lift usage to those who need the lifts most.
Escalators will move more people more quickly than travelators which will be good in peak hours.
